Wedgewood Houston's Newest Bar Brings a Unique Offering to Nashville

Nashville Cider fans have long known frustration in a city with a thriving beer, bourbon, and food communities. It was difficult to find a dry, balanced, or semi sweet cider on tap out on the town, an absence particularly felt on 2-for-1 beer nights or for those with a gluten allergy. Available ciders have been extremely sweet and created from juice concentrate, not fresh-pressed apples. Simply put, there was a hole in Nashville's alcoholic offerings.

Enter Diskin Cider.  

Their Mission statement on their website reads “We do fucking cool shit,” and we think anyone who enjoys cider will agree.  We also think that if you’re not currently a cider drinker, you should to prepare to be won over. This team is smart, they care about their community, they’re thrilled to be new members of Wedgewood Houston, and we are excited to welcome them to the neighborhood!

Diskin Cider is Adam Diskin and Todd Evans.  Todd is a Nashville Native. Adam grew up in the Pacific Northwest drinking craft cider.  The two became friends after Adam moved to Nashville from Seattle. Adam never particularly had a taste for beer and when he moved here he experienced the lack of great cider available and thought to himself, “How hard could it be to make this?”  Famous last words. He realized what a daunting task he had taken on so Todd and Adam decided it was a great opportunity to pursue formal training. They attended Cider School, with Cider Master Peter Mitchell guiding them through the finer points of the brewing process, and upon finishing their training they had developed several recipes that they were overjoyed to bring to our city as an offering. Among these recipes were their four flagship flavors that will always be on tap:  Bob’s Your Uncle, Little Blondie, 615, and Tiki Tonic.

*Bob’s Your Uncle is a traditional English Dry and a nod to the origins of cider.  It consists of fresh pressed apple juice and no added sugars. Coming in at 6.9% ABV it packs the biggest alcoholic punch of their ciders, and drinks like a sparkling cider or champagne.  

*Little Blondie is a semi sweet Southern Cider.  The sweetness comes from backsweetening the cider with fresh pressed apple juice post-fermentation.  It is 5.6% ABV.

*Their nod to Nashville, 615, is a Fruit Tea Cider.  Basically danger in a glass, they blend in orange, lemon, and pineapple, and steep it in black tea.  They have also purposely brought the carbonation down so that it drinks just like a sweet tea. It’s a little less alcoholic (perhaps thankfully, considering how smooth it goes down) than the others at 5.0% ABV.

*Rounding out the quartet is Tiki Tonic, a pineapple cider with pineapple and a little lime blended back into the cider after the brewing process.  It is also 5.0% ABV.

The Diskin tap room will also feature seasonal ciders, as well local beers on the remaining taps. They have a full liquor license and a menu ofcider cocktails for all to enjoy. They also boast a delicious farm to table menu, complete with gluten-free options.There are options for everyone in the neighborhood to enjoy!

Their attention to detail doesn’t stop with their ciders and food.  From the outside, those who are familiar with industrial farming communities will immediately pick up on the nod, and not just because there is a large, beautiful red tractor emblazoned with their name on the property..   The outside patio will have a firepit for those chilly fall evenings and there promises to be much in store during the Wedgewood Houston Art Crawls with a plaza being split between Diskin and the adjacent condos that already has an art currator working on contributions to the monthly crawl.  The woodwork of many of the outdoor features and tasting pavilion was intentionally created by makers at one of our beloved Wedgewood Houston arts anchors, Fort Houston, and the interior leans partial brewery, front porch, living room, and church.

In the short time they’ve been open they have already worked to contribute so much to our community and we are excited for what they’re bringing to Wedgewood Houston. The Diskin team is  excited to be involved in the neighborhood andt people to know that they really love it here and look forward to contributing to the deep community all neighbors are continuing to cultivate.
